I have been on a bit of a health kick over the past couple of weeks following a particularly nasty bout of flu which is taking a while to completely recover from. To aid my recovery, I have been pumping my body full of wholesome, healthy foods, and staying away from the naughty stuff. As I am quite partial to a sweet treat with a cup of tea, rather than be tempted I have been making up these Vitality Balls.

Vitality Balls

The recipe is a variation of a recipe given to me by a very healthy friend of mine, Fiona. Packed full of goodness, they satisfy a sweet tooth whilst nourishing the body. The kids will love them too – perfect for lunchboxes or an afternoon treat.

Ingredients (makes about 20):
1 cup unsalted nuts (your choice – almonds, hazelnuts, walnuts, macadamias, etc, or a mixture)
1 cup dried fruit (choose from figs, dates, raisins, apricots, etc – sulphate-free are preferable)
1/2 cup rolled oats
1/4 cup shredded coconut
1/4 cup sesame seeds
1 tablespoon Chia seeds
1/3 cup tahini (unhulled is preferable)
2 tablespoons honey (raw is preferable)
1/4 teaspoon cinnamon

1. Preheat the oven to 170°C.
2. Place the fruit and nuts in a food processor or blender and process until chopped.  Add the other ingredients and process until combined.

3. Take heaped dessertspoons of the mixture and roll into 3cm balls. Place on a lined baking tray and bake for 15 minutes or until starting to brown.

4. Allow to cool on the tray then enjoy.
