recipe: quick & easy gourmet breakfast treat

This is my favourite breakfast, any day of the week! White truffle oil is available from Simon Johnson and most Gourmet Food Stores. I use sourdough bread (I always have a sliced loaf in the freezer for toasting) but soy and linseed bread works well too:

Mash a ripe avocado with a fork and mix through ½ teaspoon white truffle oil and some freshly ground pepper and sea salt. Spread on top of toasted sourdough bread and drizzle with a little extra truffle oil.

  1. I love this Breakfast idea as I tend to stick with the cereal/fruit/yogurt brekkie which after a while gets boring!! Thank you Gail – is the White Truffle Oil cholestrol free I wonder?

  2. Hi Mary, White Truffle Oil is generally made with extra virgin olive oil. As you probably already know, olive oil lowers the bad cholesterol (LDL) and increases the good cholesterol (HDL) so it is the oil of choice if you are concerned about your health. Just check the label when buying truffle oil to make sure that the oil used is actually olive oil.
