recipe: parmesan and parsley pea mash

This simple but tasty accompaniment goes with just about anything. Frozen peas are one of the few exceptions to “fresh is best” and are a great staple to have on hand. Whilst podding peas I’m sure is very therapeutic, this blog is about making entertaining easy and shortcuts like this are the way to go for the hectic host, particularly when there is little or no difference in the end product.

This dish can be made ahead of time and reheated in a microwave oven at serving time – perfect for entertaining.

Ingredients (serves 4):
3 cups frozen peas
¼ cup extra virgin olive oil
¼ cup fresh lemon juice
½ cup finely grated parmesan cheese
½ cup chopped flat-leaf parsley
Salt and pepper to taste

Method (it will take you about 10 minutes):
1.    Bring a saucepan of salted water to the boil over the stove and cook the peas for 2-3 minutes. Drain well and return to the saucepan.
2.    Add the olive oil, lemon juice, parmesan cheese and parsley and mash roughly. Season to taste with salt and pepper.
