Roasted garlic develops a lovely sweet flavour and can be used in dips, sauces, soups or just about anything. Here’s how to roast a whole head of garlic:
Take a head of garlic and peel away the outer layers of the garlic skin, leaving the skins of the individual cloves intact. Using a knife, cut about ½ cm off the top of the head, exposing the individual cloves of garlic. Drizzle with a little olive oil, wrap in a piece of foil and bake in a 180°C oven for about 30-40 minutes or until the cloves feel soft when pressed. Allow to cool.
For a simple and delicious appetiser, serve a roasted head of garlic with crackers or toasts alongside a small pot of cream cheese. Spread a little cream cheese on a cracker, then squeeze a garlic clove on top and spread.
