Recipe: Lime & Wasabi Dressing

The onset of the warmer weather to me is a time to start putting lighter, healthier foods back on the menu: barbequed foods instead of slow braises, fresh fruit replaces heavy desserts, and lots of salads! Despite their reputation by some as being dull, salads to me are an opportunity to be creative.  Even the most ordinary salad can be made special with an interesting dressing. My husband, who is not a big fan of greens, has been known to steal my share of the salad and I know this is mainly due to the tasty dressings I make up!

This salad dressing packs a punch thanks to the addition of wasabi. It’s a simple dressing with just a small handful of ingredients and can be made up in a couple of minutes. I love it with a salad of seared tuna, rocket and avocado, but it would go equally well with chicken or a plain green salad.

Wasabi and Lime Dressing
Finely grated zest of 1 lime
60ml freshly squeezed lime juice
80ml macadamia nut oil
2 teaspoons wasabi paste
Sea salt and freshly ground pepper to taste

Shake all of the above in a screw top jar. Pour it over your salad of choice just before serving and toss well.

    Hi Geoff, Maldon is good, but I find I alternate between it and Murray River Pink sea salt, which is equally good!
