Recipe: Tropical Tarte Tatin
Tarte Tatin is an upside-down tart, made most commonly with apples, where the fruit is caramelised in sugar and butter prior to baking. Because I like to incorporate local and seasonal produce into my cooking, I came up with this version, where pineapple and passionfruit replace the traditional apple. It’s a tropical twist on an old favourite, and it’s really good!

What’s in Season – June
Due to popular demand, I have introduced this “what’s in season” column to my blog. As my regular readers would know, I am a big advocate of eating seasonally. Some of the many advantages of eating in-season fruits and vegetables are:
1. Produce is at its optimum taste
2. Better health benefits for you – produce is higher in nutritional value when it is fresh and hasn’t been stored

Recipe: Cumquat Marmalade
At this time of the year in many parts of Australia, cumquat trees are bursting with ripe fruit. Many suburban homes have cumquat trees in their gardens as an ornamental, but sadly the fruit is left to rot as it is too tart for most people to eat. However, cumquats make fantastic marmalade – the perfect way to use that cumquat crop that you didn’t know what to do with.
