Recipe: Lime & Coconut Muffins

Limes are in season, and I am fortunate to have a tree which is currently bulging with fruit. As well as give limes away to friends and neighbours, I like to make the most of them in my cooking. This includes these delicious muffins which sing with the flavours of summer. At this time of the year, these are the muffins we serve to our cooking class participants when they arrive, and they are always devoured. They are easy to make too – you’ll have them prepared and ready to cook before your oven is hot!

Review: Baked and Delicious Magazine

I have been test-running the new Baked and Delicious magazine the past couple of weeks, and wanted to share with you some of the gorgeous recipes I have been making. Baked and Delicious is a fortnightly baking magazine, comprising recipes, step-by-step instructions and better baking tips. The magazine is beautifully photographed, and the recipes include sweet and savoury, traditional and modern. In addition, each issue includes a different piece of silicone bakeware, including pans, trays and moulds, to form a complete range of standard sizes and shapes to suit most recipes.

Recipe: Strawberry Muffins

Strawberries are in the height of their season on the Sunshine Coast in Queensland Australia, where I live. As they are so inexpensive to buy at the moment, I have been buying them in bulk and preparing a wide selection of strawberry dishes – strawberry jam, strawberry cake, strawberry daiquiris, strawberry clafoutis to name but a few!

Recipe: Anzac biscuits

It’s Australia Day tomorrow, a day when Australians celebrate everything that’s great about this fantastic country. It is also a day when Australians enjoy some of their favourite national dishes – pavlova, barbequed lamb and lamingtons come to mind.
