recipe: mango salsa
New season mangoes have arrived in abundance, so I thought it only fitting to provide my recipe for Mango Salsa. This simple but delicious accompaniment goes wonderfully with chicken, pork, duck, prawns and all seafood.
Ingredients:
1 large or 2 small mangoes, cut into 1cm dice
½ small red onion, finely diced
1-2 bird’s eye chilli’s, seed removed and finely chopped
¼ cup finely chopped fresh coriander
2 tablespoons fresh lime juice
¼ teaspoon sea salt
Method:
1. Combine all ingredients in a bowl.
2. Cover with plastic food wrap and refrigerate until ready to use.
