recipe: creamy tuna dip

This divine dip is made in less than 10 minutes, and is perfect for entertaining as it can be made up to 2 days ahead of time. The recipe can be easily doubled or tripled to feed a larger crowd. I like it served with Lavosh crackers, but you could serve it with fresh Turkish bread or baguette.

Ingredients (serves 4-6):
1 x 185g can of tuna in chilli oil, drained
100g cream cheese, at room temperature
Juice of ½ lemon
1 small red onion, finely diced
1 tablespoon capers, drained and roughly chopped

To serve: crackers, fresh Turkish Bread or baguette

Method:
1. Place all ingredients in a bowl and mix well until smooth. Alternatively place in a food processor and process until smooth.
2. Spoon into a serving dish, cover with plastic food wrap and refrigerate until ready to serve.
3. Serve with crackers, fresh Turkish bread or baguette.

Just made this for the girls coming over for our ‘Magazine Club’ meeting. LUSH. The latecomers may miss out! And to think, I googled ‘cos I was going to make oyster dip in philly cream, got home to discover I’d bought tuna. My boring oyster dip is out the window now.
